WOOP’s Classic Pulled Pork Tacos

This dish recently featured on the WOOP Classic menu. At WOOP we handle the prep - roasting, blending, marinating, saucing and everything in between so you can easily and quickly cook dinner. The recipe below is the full recipe for you to create this dish from scratch which takes a fair bit longer than if you had enjoyed it with WOOP, where the time-consuming elements had already been prepared.

Directions

To make the Chipotle Lime Mayo:

1Mix 1 tbsp of of La Mamma Chipotle into 1 cup of Mayonnaise.

2Add the juice of 2 limes and season with salt and pepper.

3Mix together and set aside.

To make the Spicy Cheese Crumble:

1Grate the Tasty Cheese and mix together with the Panko Crumbs.

2Add and mix with, 1/4 tsp of Smoked Paprika - 1/4 tsp of Cumin - finger pinch of Dried Oregano and 1 tbsp of Olive Oil.

Cooking Method: Pre-heat the oven to 200.C fan-bake

To cook the cauliflower:

1Cut the cauliflower into florets.

2Place on an oven tray lined with baking paper.

3Sprinkle over the cheesy spiced crumb followed with a drizzle of olive oil and bake in the preheated oven for 22 mins.

4Season with salt and pepper.

To prepare the slaw and pork:

1Mix together the finely sliced red cabbage, grated carrots and parsley with the juice of 1 lime and 2 tbsp of olive oil and season with salt and pepper.

2Cut the last lime into small wedges and set aside.

3Heat 1 tbsp of cooking oil in a non-stick frying pan over a medium heat. Once hot, add the pulled pork to the pan and cook for 3-4 mins until pork is starting to brown and has crisped a little.

4Season with salt and pepper.

To warm the tacos :

1Fry pan option (preferred): Warm the tacos in a frying pan for 20 seconds on each side.

2Oven option: Wrap the tacos in tinfoil and place in the pre-heated oven for 4-5 mins.

To serve:

1On each taco place 2 tbsp of cabbage & carrot slaw, topped with pulled pork and chipotle and lime mayo.

2Serve with lime wedges and some crispy baked cauliflower on the side.

Ingredients

500gm of Pulled Pork

15 x Plain 6" Tortilla Tacos

Finely Sliced Red Cabbage Half

2 Grated Carrots

Cauliflower Half, chopped into small florets

4 Limes

Small bunch of Parsley finely chopped

1 cup of Mayonnaise

La Mamma Smoked Chipotle sauce

50gm of Tasty Cheese

30gm Panko Crumbs

Smoked Paprika

Cumin Ground

Oregano dried

Olive oil

Salt & Pepper
