Teriyaki beef and rice

1. TO COOK THE RICE:
Empty the basmati rice into a medium sized pot with a tight-fitting lid and add 500 ml of warm water. Place pot on stovetop and bring to the boil over a high heat. Once the rice is boiling place lid on the pot and reduce the heat to low and cook for 12 mins. Turn off the heat and let stand for 4 mins covered. Remove the lid and add the mirin sesame dressing and fluff the rice with a fork.

2. TO PREPARE AND COOK THE VEGETABLES:
Cut the broccoli into florets and discard the stem. Remove any damaged outer leaves from the bok choy and discard. Trim 1 cm off the base and discard, and then cut into three sections. Cut the capsicum into ½ and remove the stalk and any seeds. Cut into ½ cm strips. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. Once hot add the broccoli and cook for 2 mins, add the capsicum and cook for a further 2 mins. Finally add the bok choy with 2 tbsps of water and cook for 1-2 mins. Remove from the pan and set aside.

3. TO COOK THE SIRLOIN STEAKS:
Return the frying pan to a high heat with a drizzle of cooking oil. Remove the premium beef sirloin steaks from their packaging and pat dry with a paper towel. Once pan is hot, add steak to the pan and fry on each side for 2-3 mins (for a medium rare steak). Remove steaks from the pan and rest for 3-4 mins before slicing each steak into 1 cm slices. Return the pan to a medium high heat and pour in the teriyaki sauce and simmer for 2-3 mins or until the sauce thickens.

TO SERVE:
Serve the rice onto each plate and top with the charred vegetables followed with slices of teriyaki beef. Drizzle the teriyaki sauce from the pan over the slices of beef. Garnish with crispy shallots.
