Sticky soy pulled lamb

BEFORE COOKING:
BOIL THE KETTLE.

1. TO COOK THE SOBA NOODLES:
Pour boiling water from the kettle into a pot and place over a high heat. Once boiling, add the soba noodles and cook for 4-5 mins. Drain into a colander, rinse under cold water and allow to drain well.

2. TO PREPARE THE SESAME CARROT AND SOBA NOODLES:
Peel and cut the cucumber in half lengthways. Scoop out the seeds with a teaspoon and discard. Slice the cucumber into ½ cm slices on the diagonal and place into a salad bowl with the carrot noodles, soba and mizuna. Spoon in the sesame sauce and gently toss to combine. Roughly chop the coriander including the stalks.

3. TO COOK THE SOY PULLED LAMB:
Spray a non-stick frying pan with oil and place over a medium-high heat. Once hot, add the pulled lamb and cook for 4-5 mins stirring occasionally to break up any large pieces. Pour in the soy sizzle sauce and cook for 30-60 secs.

TO SERVE:
Spoon sesame carrot and soba noodles into bowls and top with sticky soy pulled lamb. Sprinkle with white and black sesame seeds and coriander.
