Smoked paprika butter sirloin steak

with herby baked potato, courgette and capsicum

  • Before cooking:

    Preheat the oven to 220°C (fan-bake).

  • 1. TO PREPARE AND COOK THE BAKED POTATOES AND VEGETABLES:

    Trim the ends off the courgette. Cut in half lengthways then cut into 1 cm half-moons. Cut the capsicum in half and remove the seeds then slice into 1 cm strips. Open the steamed potatoes and place on an oven tray lined with baking paper with the courgette and capsicum. Drizzle over the capsicum herb oil and season with salt and pepper. Place into the preheated oven and cook for 22-25 mins.

  • 2. TO COOK THE SIRLOIN STEAKS:

    Remove the premium sirloin steaks from their packaging and pat dry with a paper towel. Season with salt and pepper. Heat a drizzle of oil in a large frying pan over a high heat. Once hot, add the steaks and cook for 2-3 mins each side. Remove steaks and place onto a plate then spoon over the smoked paprika butter, rest for 3-4 mins then slice into 2 cm strips.

  • TO SERVE:

    Divide herby baked potatoes, courgette and capsicum between plates. Top with sirloin steak slices and spoon over any smoked paprika butter. Finish with a dollop of sour cream & chives.
