Satay carrot noodles

with caramelised vegetable patties and kaffir lime peanuts

Cooking Instructions:
  • 1. TO PREPARE THE VEGETABLES:

    Cut the broccoli into small bite sized pieces. Remove the mint leaves from their stalks and chop roughly.

  • 2. TO COOK THE BROCCOLI AND EDAMAME:

    Place a non-stick frying pan over a medium-high heat with a drizzle of oil. Once hot add the broccoli, season with salt and cook for 4-5 mins stirring occasionally to create a char. Add the edamame and carrot noodles and cook for 1-2 mins. Pour in the peanut dressing and toss to combine.

  • 3. TO COOK THE VEGE PATTIES:

    Wipe out the pan, drizzle with oil and place back over a medium-high heat. Remove the vege patties from their packaging and cut into triangles. Once the pan is hot, add the patties and cook for 2-3 mins each side. Pour in the kaffir lime and soy sizzle sauce and cook for 30 secs.

  • TO SERVE:

    Place peanut carrot noodles and vegetables into bowls. Top with soy seasoned vege patties and sprinkle with kaffir lime peanuts and mint.

  • 1 sachet of kaffir lime peanuts
  • 1 bag of carrot noodles
  • Broccoli
  • 1 pot of edamame
  • 1 bag of mint
