1. TO MAKE THE SLAW AND GRILL THE ASPARAGUS:
Place the coleslaw into a salad bowl. Finely chop the curly parsley discarding the stalks and add half the parsley to the salad bowl. Add the sweet mustard dressing, season with salt and pepper and toss to combine. Snap the woody ends off the asparagus and discard (they will naturally snap In the right place). Place a non-stick frying pan over a medium-high heat with a drizzle of olive oil. Once hot add the asparagus and cook for 4-6 mins until tender and charred. Remove from the pan, cover and keep warm.

2. TO COOK THE CARAMELISED ONIONS:
Peel the red onion and finely slice. Respray the pan with oil and place over a medium heat. Once hot add the onion, season with salt and cook for 3-4 mins until caramelised. Push all the onions to one side of the pan while you cook the patties and turn occasionally.

3. TO COOK THE PARMESAN AND MOZZERELLA BEEF PATTIES:
Open the pack of parmesan seasoned beef mince and place in a bowl with the mozzarella crumb. Mix together well and shape into 8 patties, 1 cm in thickness and compact firmly. Add the patties to the pan with the onions and cook for 3-4 mins on each side.

TO SERVE:
Place the parmesan and mozzarella beef patties onto plates, top with the caramelised onions and dollop with black garlic aioli. Serve with the charred asparagus and seeded mustard slaw on the side. Sprinkle with remaining parsley.

- 1 pot of black garlic aioli
- 1 pot of sweet mustard dressing
- 2 red onions
- 2 bunches of asparagus
- 1 bag of coleslaw
- 1 bag of curly parsley
