1. TO PREPARE THE VEGETABLES AND TOFU:
Open the pot of edamame and remove the makrut lime leaf then remove the stalk and finely slice the leaves. Slice the root end off the bok choy and discard. Slice the stem into ½ cm slices and roughly chop the leaves, keeping separated. Peel and dice the carrot into 1 cm cubes. Place 2-3 Tbsp of flour or cornflour into a large bowl and season with salt. Remove the tofu from its packaging and pat dry with a paper towel. Cut into 2 cm cubes then coat well in the flour or cornflour.

2. TO COOK THE GARLIC FRIED RICE:
Place a non-stick frying pan over a medium-high heat with a drizzle of oil. Once hot, add the carrot and cook for 2-3 mins. Add the bok choy stems and edamame then cook for 1-2 mins, stirring occasionally to create a char. Open the bag of steamed basmati rice, breaking up any clumps by squeezing the bag gently then add to the pan with the makrut lime leaf and bok choy leaves. Cook for 1-2 mins then pour in the garlic and lime oil. Season with salt, stir and cook for a further 1-2 mins then remove from the pan and cover to keep warm.

3. TO COOK THE TOFU:
Wipe out the pan, place back over a medium-high heat with a drizzle of oil. Once hot, add the tofu and cook for 4-5 mins or until golden on all sides. Pour in the lemongrass sauce, turn to coat the tofu and cook for 30-60 secs until the sauce has reduced slightly.

TO SERVE:
Spoon the garlic fried rice and lemongrass tofu into bowls. Dollop with tom yum drizzle and sprinkle over roasted cashews. Mix together to eat.
