Korean marinated lamb strips

with a sesame and soy vegetable stir fried rice

  • 1. TO PREPARE THE VEGETABLES:

    Peel and grate the carrot then trim the ends off the green beans and cut in half.

  • 2. TO COOK THE SESAME AND SOY VEGETABLE FRIED RICE:

    Heat a drizzle of oil in a non-stick frying pan over a medium to high heat. When the pan is hot add the green beans and stir fry for 2-3 mins. Add the edamame beans and cook for a further 1 min. Open the bag of steamed brown rice breaking up any clumps by squeezing gently on the bag until broken up. Add the steamed brown rice and the grated carrot and cook for 1-2 mins until rice is hot. Add the sesame soy dressing, season with salt and pepper and cook for 1 min. Place in a serving bowl and cover to keep warm.

  • 3. TO COOK THE KOREAN LAMB STRIPS:

    Heat a drizzle of olive oil in a non-stick frying pan over a high heat. When the oil is hot add the Korean marinated lamb strips reserving any marinade in the bag. Stir fry for 30 sec to 1 min being careful not to overcook then add the reserved marinade. Remove from the heat straight away and place in a serving bowl.

  • To serve:

    Divide sesame soy vegetable rice between bowls. Top with Korean marinated lamb strips and chopped roasted peanuts.
