Hoisin glazed salmon

with minted potatoes, sour cream and peas

Cooking Instructions:
  • Before cooking:

    Preheat the oven to 220°C (fan bake).

  • 1. TO COOK THE POTATOES AND PEAS:

    Cut the gourmet potatoes into bite sized pieces. Place into a medium pot of warm water and bring up to the boil. Once boiling, cook the potatoes for 10 - 12 mins. In the final 2 mins of cooking, add the peas to the pot. Once the potatoes are cooked, drain into a colander (this can be tested by pressing potatoes with a fork – it should easily go through).

  • 2. TO COOK THE SALMON:

    Cut each piece of salmon into two. Place salmon pieces skin side down on an oven tray lined with baking paper and coat with the hoisin lime glaze & sesame seeds. Place in the oven and bake for 6-7 mins (or 2 mins longer if you like your salmon well cooked).

  • 3. TO ASSEMBLE THE SALAD:

    Remove the mint leaves from their stalks and finely chop. Place cooked potatoes and peas into a large bowl. Add the baby spinach and allow it to wilt. Stir in the sour cream then the red onion jam and the chopped mint. Season with salt and pepper.

  • To serve:

    Spoon warm salad onto plates and top with a piece of salmon.
