Grilled sirloin steak

with skinny chips and brandy cream sauce

RECIPE FACT:
Anything that will ferment can be distilled and turned into a brandy. Grapes, apples, blackberries, sugar cane, honey, potatoes and rye are all commonly fermented and distilled.

Cooking Instructions:
  • BEFORE COOKING:

    Preheat the oven to 210°C fan bake.

  • 1. TO COOK THE POTATO CHIPS:

    Line an oven tray with baking paper. Gently empty the bag of steamed potato chips onto the tray and pat dry to remove excess moisture, drizzle with oil and season with salt and pepper. Cook in the oven for 15 mins, turn the chips over and cook for a further 10-12 mins.

  • 2. TO COOK THE VEGETABLES:

    Peel the red onion, cut in half and finely slice. Cut the kale in 1 cm slices discarding the stalk. Heat a drizzle of oil in a frying pan over a medium-high heat. Once hot, add the red onion and cook for 3-4 mins until gently caramelised. Add a small knob of butter the peas and kale and cook for 1 min until wilted. Season with salt and pepper and set aside to keep warm until needed.

  • 3. TO COOK THE SIRLOIN STEAK:

    Remove the beef sirloin steaks from their packaging, pat dry with a paper towel and season with salt and pepper. Place the pan back over a medium-high heat with a drizzle of oil. Once hot, cook the steaks for 2-3 mins each side for medium rare - a little longer for well done. Remove from the pan, cover and rest a few minutes before slicing. Leaving the pan over a medium-high heat pour the brandy cream sauce and cook for 1-2 mins.

  • TO SERVE:

    Divide the potato chips and the vegetables between plates. Top with the sirloin steak and spoon the brandy cream sauce over.
