Grilled chicken Caesar

with poached eggs and broccolini

Our remake of this classic includes instructions on how to poach an egg, however if you prefer a soft-boiled egg would be equally delicious.

  • Before Cooking

    Boil the kettle

  • 1. TO PREPARE THE SALAD:

    Pour half of the boiling water from the kettle into a medium pot and bring to the boil over a high heat. Thinly slice the radishes. Trim the ends off the broccolini and cut into bite sized pieces. When the water is boiling add the broccolini to the pot and blanch for 2-3 mins. Drain into a colander and set aside to cool for a few mins. Remove any damaged outer leaves from the baby cos lettuce and discard. Rinse the cos under cold water and shake dry. Slice the root off and slice the cos into 3 cm slices and separate the leaves. Place in a salad bowl with the radishes. Add the broccolini to the bowl, shake the Caesar dressing and pour over half of the dressing. Gently toss salad to combine.

  • 2. TO POACH THE EGGS:

    Pour remaining boiling water from the kettle into a medium pot filling ¾ full. Bring back up to the boil. Once boiling reduce the heat to low. Break an egg into a cup and pour the egg into the pot. Repeat with the remaining egg. Poach the eggs for 1 ½ minutes for soft poach, 2 mins if you prefer a firmer egg. Remove the eggs from the pot using a slotted spoon and drain on paper towel.

  • 3. TO COOK THE CHICKEN:

    Remove the free-range chicken breasts from their packaging and pat dry with a paper towel. Slice into 1 cm strips. Spray a non-stick frying pan with oil and place on a medium-high heat. Once hot add the chicken strips, season with salt and pepper and cook for 2-3 mins on each side until cooked through.

  • TO SERVE:

    Arrange salad on plates. Top salad with grilled chicken strips, poached egg and toasted pumpkin seeds . Drizzle over the remaining Caesar dressing. Sprinkle over shaved parmesan.

  • 1 baby cos lettuce
