Greek marinated beef sirloin

with feta crushed potatoes, Greek salad and tzatziki

  • Before cooking:

    Preheat oven to 210°C (fan bake)

  • 1. TO COOK THE POTATOES:

    Empty packet of steamed potatoes onto an oven tray lined with baking paper. Using a fork press down on the potatoes to crush slightly. Drizzle with olive oil and season with salt and pepper. Place in the preheated oven and bake for 10 mins. Remove from oven and crumble over feta and return to the oven for a further 20 mins.

  • 2. TO PREPARE GREEK SALAD:

    Trim 1 cm of the root end off the baby cos lettuce. Remove any damaged outer leaves and discard. Shred lettuce in ½ cm strips and add to a large bowl. Dice the tomatoes and cucumber into 1 cm cubes. Add to the bowl with lettuce and toss with 1 tbsp of olive oil and season with salt and pepper.

  • 3. TO COOK THE STEAK:

    Remove the marinated beef sirloin steaks from their packaging. Heat a large non-stick frying pan on a medium-high heat. Once the pan is hot add the steak and cook on each side for 1-2 mins for medium rare. Set aside to rest then thinly slice.

  • TO SERVE:

    Roughly chop Italian parsley. Divide feta roast potatoes and Greek salad between plates. Top with sliced marinated beef, a dollop of tzatziki and sprinkle with chopped parsley.
