Garlic butter beef steak

BEFORE COOKING:
Preheat oven to 210°C (fan bake).

1. TO COOK THE POTATOES AND CARROT:
Line an oven tray with baking paper. Place the steamed potatoes onto the tray. Peel and cut the carrot in half lengthways then slice into 1/2 cm half-moons. Add the carrot to the potatoes, drizzle with oil and season with salt and pepper. Cook in the oven for 15 mins.

2. TO COOK THE GREEN BEANS:
Trim both ends off the green beans. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. Once hot, add the green beans season with salt and pepper and cook for 5-6 mins stirring occasionally to create a char. Remove from the pan, cover and set aside.

3. TO PREPARE AND COOK THE STEAKS:
Remove the premium sirloin steaks from their packaging and pat dry with paper towel. Season with salt and pepper. Wipe out the pan and place back over the heat with a drizzle of oil. Once hot, add the steaks and cook on each side for 2-3 mins for medium rare - a little longer for well done. Remove from the pan, cover and rest a few minutes before slicing.

4. TO PREPARE THE GARLIC BUTTER:
Place the pan back over a medium heat and add the garlic butter. When the butter starts to bubble, add spiced almonds, stir and turn off the heat.

TO SERVE:
Divide potatoes and vegetables between plates. Top with sliced beef, drizzle over garlic butter and spiced almonds. Serve lemon and herb mayo on the side.
