Cajun black bean burgers

with broccolini fries and remoulade sauce

Cooking Instructions:
  • Before cooking:

    PREHEAT THE OVEN TO 210⁰C (FAN BAKE).

  • 1. TO COOK THE BROCCOLINI AND BUNS:

    Slice the hamburger buns in half and wrap in tin foil. Line an oven tray with baking paper. Trim the woody ends off the broccolini and place on the tray and drizzle with oil. Bake in the oven with the burger buns for 7-8 mins.

  • 2. TO PREAPARE THE CAJUN BEAN PATTIES:

    Place the black beans into a sieve, rinse under cold running water and drain well. Place the beans into a bowl with the Cajun seasoning. Add a generous drizzle of oil and mash with a potato masher. Shape into 4 balls, compacting well then flatten into 1 cm patties. Place a non-stick frying pan over a medium heat with a drizzle of olive oil. Once the pan is hot, gently add the patties to the pan and cook for 3-4 min undisturbed, carefully flip the patties and sprinkle the mozzarella cheese on top of each pattie. Cover with a lid and cook for 3-4 mins until cheese is melted.

  • 3. TO PREPARE THE SLAW:

    Place the coleslaw into a salad bowl. Cut the radishes in half then slice finely into half rounds and place in the bowl with the lime dressing. Season with salt and pepper and toss to combine.

  • TO SERVE:

    Open the hamburger buns and dollop the base with remoulade sauce. Place the Cajun black bean pattie on top with a spoonful of coleslaw. Serve charred broccolini on the side with extra slaw and remoulade sauce.

  • 1 sachet of Cajun seasoning
  • 1 pot of remoulade sauce
  • 1 pot of mozzarella cheese
  • 1 pot of lime dressing
  • 1 bag of coleslaw
  • 3 radishes
  • 1 bag of broccolini
