Cacao kumara tacos

with charred broccolini and chipotle lime mayo

  • Before cooking

    PREHEAT THE OVEN TO 210⁰C (FAN BAKE).

  • 1. TO COOK THE CACAO KUMARA AND TORTILLAS:

    Line an oven tray with baking paper. Place the steamed kumara on the tray, drizzle with oil and sprinkle over the cacao and cumin rub tossing well with your hands to coat the kumara. Bake in the oven for 12-14 mins. Wrap the wholemeal tortillas in tin foil and place in the oven with the kumara and heat for 4-5 mins.

  • 2. TO GRILL THE BROCCOLINI AND CORN:

    Trim the woody ends off the broccolini. Add the corn and broccolini to the oven tray and cook for 7-8 mins along with the tortillas.

  • TO SERVE:

    Smear each taco with walnut and tomato dip. Fill each taco with 2-3 pieces of charred broccolini and a spoonful of corn and cacao kumara. Dollop with chipotle and lime mayo, sprinkle over chopped coriander and puffed quinoa.

  • 1 pot of chunky walnut and tomato dip
  • 1 sachet of puffed quinoa
  • 1 bag of broccolini
  • 1 pot of corn
  • 1 bag of coriander
