5 winter dessert ideas

Five simple puddings for the cooler months — from a five-minute chocolate mousse to a quick apple crumble — gathered from some of our favourite recipe sites.

1. Easy chocolate mousse

Recipe from Nigella.

This recipe uses marshmallows to replicate the thick and smooth texture of a traditional mousse.

Ingredients

  • 150 grams mini marshmallows
  • 50 grams soft butter
  • 250 grams good dark chocolate (minimum 70% cocoa solids) chopped into small pieces
  • 60 millilitres hot water (from a recently boiled kettle)
  • 284 millilitres double cream
  • 1 teaspoon vanilla extract

Directions

  1. Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
  2. Put the saucepan on the hob, over heat, though keep it fairly gentle, to melt the contents, stirring every now and again. Remove from the heat.
  3. Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.
  4. Pour or scrape into 4 glasses or ramekins, and chill until you want to eat. The sooner the better!

2. Caramelised bananas and ice cream

A simple recipe with ingredients you’ll have in your pantry.

Ingredients

  • 2 tbsp butter
  • 2 sliced bananas
  • 2 tbsp brown sugar
  • Pinch cinnamon
  • Ice cream

Directions

Melt 2 tablespoons butter in a skillet. Add 2 sliced bananas and 2 tablespoons brown sugar. Cook until golden and syrupy, about 5 minutes. Sprinkle the bananas with cinnamon and spoon over ice cream.

3. Baked rice pudding

Recipe from Food Network

Another easy recipe with pantry staples; rice, cream, sugar and butter.

Ingredients

  • 1/2 cup long grain white rice
  • 2 cups milk
  • 1 cup light cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/4 cup sugar

Directions

  1. Preheat oven to 350 degrees.
  2. In a large pot of boiling water, cook rice for 5 minutes and drain. Rinse under running water and set aside to drain.
  3. In a saucepan, combine milk, cream, vanilla, zest and cinnamon. Bring mixture to a boil and stir. Turn off heat and stir in butter and sugar. Let mixture cool for 15 minutes.
  4. Add the rice to the milk mixture and pour into a baking dish. Cover with foil and bake about 1 hour and 15 minutes. Stir the mixture after 45 minutes. Serve warm.

4. Affogato

One for the parents…

Ingredients

  • 2 scoops ice cream
  • Shot of Espresso
  • Shaved dark chocolate
  • Chopped hazelnuts

Directions

Place 2 small scoops of ice cream (coffee, chocolate or vanilla) in a coffee cup, then pour in a shot of espresso or 3 tablespoons strong brewed coffee. Top with shaved dark chocolate and chopped hazelnuts.

5. Quick apple crumble

Recipe from Taste

Everyone’s favourite, a quick and easy apple pie.

Ingredients

  • 3 apples
  • 1 tbsp lemon juice
  • 1 tbsp caster sugar
  • 1/4 cup water
  • 1/3 cup plain flour
  • 1/3 cup caster sugar
  • 1/3 cup rolled oats
  • 60g butter, chopped
  • Ice cream or whipped cream to serve

Directions

  1. Preheat oven to 180C/160C fan-forced. Combine apples, juice, sugar and water in small saucepan over low-medium heat. Cook, stirring for 3 minutes or until apple is slightly softened.
  2. To make the crumble, combine the flour, sugar, oats and butter in a bowl. Use your fingertips to rub the butter into the flour mixture until the mixture resembles breadcrumbs.
  3. Transfer apples into a 3 cup-capacity ovenproof dish, draining off most of the liquid. Sprinkle crumble mixture over the apples. Bake in oven for 20-25 minutes or until golden. Serve warm with ice-cream or whipped cream.
