Black bean and cacao mole

with roasted pumpkin and crispy blue corn tortilla

Cooking Instructions:
  • Before cooking:

    PREHEAT THE OVEN TO 210⁰C (FAN BAKE).

  • 1. TO COOK THE PUMPKIN AND CRISPY TORTILLA:

    Line an oven tray with baking paper. Add the diced pumpkin to the tray. Drizzle with olive oil and season with salt. Bake in the oven for 14 - 15 mins. Slice one of the blue corn tortillas into 2 cm strips and place on the oven tray in a single layer with the pumpkin and bake for a further 5-6 mins until tortillas are crisp and pumpkin is caramelised around the edges.

  • 2. TO COOK THE CHARRED CORN BARLEY:

    Place a non-stick frying pan over a medium-high heat with a drizzle of olive oil. Once hot add the corn and cook for 4-5 mins stirring occasionally to create a char. Open the steamed barley, squeezing gently on the pack to break up any large clumps and add to the pan. Cook for 2-3 mins. Season with salt and pepper, drizzle with olive oil and remove from the pan.

  • 3. TO COOK THE CACAO MOLE:

    Place the black beans into a sieve, rinse under cold running water and drain well. Remove the kale leaves from their stalks and discard. Pile the leaves on top of each other and slice into ½ cm strips. Slice the roasted red capsicum into 1/2 cm strips. Wipe out the frying pan and place back over a medium-high heat with a drizzle of oil. Once hot add the capsicum and kale and cook for 2-3 mins. Add the half the black beans and cook for 1-2 mins. Pour in the cacao mole and cook for a further 2-3 mins. Season with salt and pepper.

  • TO SERVE:

    Spoon charred corn barley into a bowl. Top with black bean and cacao mole. Sprinkle with roasted pumpkin and dollop with coriander crema. Top with crispy blue corn strips.
