1. TO MAKE THE CORN AND TOMATO SALSA:
Cut the tomato in half and remove the core. Dice the tomato into ½ cm cubes. Roughly chop the coriander including the stalk which has lots of flavour. Place tomato, corn and coriander in a bowl. Drizzle over 2 tbsp of olive oil and season with salt and pepper. Stir to combine.

2. TO HEAT THE RICE:
Microwave option (preferred): Open the bag of steamed rice breaking up any clumps by squeezing gently and add to a microwave safe bowl, cover and cook on high (750W) for 2-3 mins. Pan method: Open the bag of steamed rice breaking up any clumps by squeezing gently. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the rice and cook for 2-3 mins until hot.

3. TO COOK THE BEEF:
Heat a drizzle of cooking oil in a non-stick frying pan over a medium high heat. Once hot add the slow cooked beef and pan fry for 3-4 mins to warm. Stir in the barbacoa sauce and cook for 1 min.

TO SERVE:
Spoon rice onto plates, then marinated capsicum and bean salad. Top with barbacoa beef and lastly tomato and corn salsa.
