Cooking Instructions:
    PREHEAT THE BBQ TO 200℃.
  • The lamb may also be cooked in an oven preheated at 180℃ (fan bake).
  • TO COOK THE LAMB (BBQ METHOD):
  • Cover and leave at room temperature for 30 mins before cooking.
  • Place the maple and bourbon butterflied leg of lamb on the grill side of a BBQ, season with salt and pepper, and cook for 12 mins each side for medium-rare – a little longer if you prefer medium or well done.
  • Remove from the BBQ, cover with tinfoil, and drape with a tea towel to keep warm.
  • Allow to rest for at least 20-30 mins before carving.
  • TO COOK THE LAMB IN THE OVEN
    TO PREPARE THE LAMB:
  • Line a large dish with baking paper. Remove the maple and bourbon leg of lamb from its packaging and lay flat in the dish.
  • Cover and leave at room temperature for 30 mins before cooking.
  • Season well with salt and pepper and drizzle with oil.
  • TO COOK THE LAMB:
  • Place the lamb in the oven and bake for 15-20 mins for a 6-person portion or for 25-30 mins for 12 people for a medium-rare cook – keep the lamb in longer if you prefer medium or well done.
  • Remove from the oven, cover with tinfoil, and drape with a tea towel to keep warm.
