Gourmet Potatoes
with dill and horseradish dressing

Cooking Instructions:
TO COOK THE POTATOES:
- Cut the gourmet potatoes in half or quarters if on the large size so all the pieces of potato are similar in size.
- Place into a pot and fill with enough water to completely cover the potatoes. Add 1 tsp of salt and bring to the boil over a high heat.
- Once the water is boiling, cook the potatoes for 10 - 15 mins or until the potatoes are cooked right through – to test this, push the tip of a knife through to see if it goes through easily.
- Drain well into a colander and allow to steam out for a few minutes.
- Peel then finely slice the red onion.
- Return the potatoes and onion back to the pot, season with salt and pepper and cover until serving.
- Finely chop the dill, discarding the stalks and set aside.
