Sweet and sour cauliflower

1. TO COOK THE CAULIFLOWER:
Line an oven tray with baking paper. Cut the cauliflower into small bite-sized pieces and place into a large bowl, drizzle with oil and toss to coat. Sprinkle over 1-2 Tbsp of flour or cornflour, season with salt and pepper and toss again to coat well. Place the cauliflower on the oven tray and bake for 20-22 mins or until crispy.
2. TO PREPARE THE CHICKPEAS AND VEGETABLES:
Place the chickpeas into a sieve, rinse under cool running water and drain well. Slice the root end off the bok choy and discard. Slice the stalks into 1 cm slices and roughly chop the leaves. Slice the roasted capsicum into 1 cm strips. Roughly chop the pineapple. Finely slice the spring onion on the diagonal.
3. TO COOK THE GARLIC RICE:
Place a non-stick frying pan over a medium-high heat and pour in the garlic oil. Once hot, add the bok choy and half the spring onion then cook for 2-3 mins. Open the bag of steamed rice, squeezing gently on the bag to break up any large clumps then add to the pan, season with salt and cook for 2-3 mins, stirring regularly. Remove from the pan and cover to keep warm.
4. TO FINISH THE SWEET AND SOUR CAULIFLOWER:
Wipe out the pan and place back over a medium-high heat with a drizzle of oil. Once hot, add the capsicum, pineapple and chickpeas and cook for 2-3 mins, stirring occasionally to create a char. Reduce the heat to low, pour in the sweet and sour sauce and add the roasted cauliflower then stir through. Allow the sauce to warm for 30-60 secs.
TO SERVE:
Spoon the garlic rice into a bowl and top with sweet and sour cauliflower. Sprinkle over spiced peanuts and remaining spring onion.
