Sticky soy pulled lamb

with charred broccolini and sesame noodles

RECIPE FACT:
Combining the carrot noodles with soba noodles in this dish lightens the carbohydrate load and is an interesting way to add more vegetables to your dinner.

Cooking Instructions:
  • BEFORE COOKING:

    Boil the kettle.

  • 1. TO COOK THE SOBA NOODLES:

    Pour boiling water from the kettle into a pot and place over a high heat. Once boiling, add the soba noodles and cook for 4-5 mins. Drain into a colander, rinse under cold water and allow to drain well. Roughly chop the coriander including the stalk and set aside.

  • 2. TO PREPARE THE BROCCOLINI AND NOODLES:

    Cut the broccolini into small bites sized pieces. Spray a non-stick frying pan with oil and place over a medium-high heat. Once hot, add the broccolini, season with salt and cook for 4-5 mins stirring occasionally to create a char. Add the soba noodles to the pan and cook for a further 1 min. Just before serving, add the carrot noodles, mizuna and pour in the sesame dressing. Gently toss to combine.

  • 3. TO COOK THE STICKY SOY PULLED LAMB:

    Spray a non-stick frying pan with oil and place over a medium-high heat. Once hot, add the pulled lamb and cook for 4-5 mins stirring occasionally to break up any large pieces. Pour in the soy sizzle sauce and cook for 30-60 secs.

  • TO SERVE:

    Spoon charred broccolini and sesame noodles into a bowl. Top with sticky soy pulled lamb and sprinkle with white and black sesame seeds and coriander.
