Cooking Instructions:
  • 1. TO PREPARE THE NOODLES:

Once the water is boiling add the soba noodles and cook for 4-5 mins then drain well into a sieve.

  • 2. TO PREPARE THE VEGETABLES:

Place the sliced red cabbage into a salad bowl. Using half the carrot, peel and make ribbons by pulling the peeler the full length along the carrot and add to the bowl. Cut the spring onion finely on the diagonal and add half to the bowl with the soba noodles. Just before serving, add the goma dare dressing and toss to combine.

  • 3. TO COOK THE BEEF:

Remove the beef sirloin steak from its packaging and pat dry with a paper towel. Spray a non-stick frying pan with oil and place over a medium-high heat. Once hot, add the beef, season with salt and pepper then cook for 2-3 mins on each side for medium rare – a little longer for well done. Remove from the pan and allow to rest.

  • TO SERVE:

Place goma dare soba and vegetable into a bowl. Slice the beef finely against the grain and place on top. Drizzle over the soy braise and sprinkle with peanut furikake and remaining spring onions.
