Cooking Instructions:
  • 1. TO PREPARE THE COOKIE DOUGH:

    Place the (room temperature) butter, egg, golden syrup/honey, and the soft ginger cookie mix into a bowl. Using a hand mixer or stand mixer, mix until combined well - the dough will be on the crumbly side.

  • 2. TO PREPARE THE SOFT GINGER COOKIES:

    Line an oven tray with baking paper. Place the icing sugar into a bowl. Roll the cookie dough into balls the size of golf balls and generously coat each ball in the icing sugar. Place the balls on the oven tray and chill in the fridge for 30 mins.

  • PREHEAT THE OVEN TO 180°C (FAN BAKE).

  • 3. TO BAKE THE SOFT GINGER COOKIES:

    Remove the tray from the fridge, make sure the balls are spaced 3-4 cm apart and place in the preheated oven for 10-12 mins. Remove from the oven and leave the cookies for 10-15 mins on the tray before moving to a wire rack to cool completely. The cookies may not look cooked at this stage but will continue to cook once removed from the oven.
