BEFORE COOKING:
PREHEAT THE OVEN TO 210⁰C (FAN BAKE).

1. TO PREPARE THE FRENCH FRIES:
Line an oven tray with baking paper. Arrange the steamed potatoes onto the tray, spray with oil and season with salt. Place in the oven and bake for 20-25 mins. Finely chop the curly parsley, discarding the stalks and set aside.

2. TO PREPARE THE VEGETABLES:
Cut the pear into quarters, remove the core then slice finely. Place into a salad bowl with the baby leaves. Peel the carrot and make ribbons by pulling a peeler the full length of the carrot, rotating after each peel and add to the bowl. Just before serving, season with salt and pepper, spoon in half the blue cheese sauce and toss well to combine

3. TO PREPARE THE BEEF:
Remove the beef sirloin steaks from their packaging and pat dry with a paper towel. Place the beef onto a plate, drizzle with oil then sprinkle over the paprika seasoning and turn to coat well. Spray a non-stick frying pan with oil and place over a high heat. Once hot, add the steaks and cook for 2-3 mins on each side for medium rare – a little longer for well done. Allow to rest a few mins before slicing against the grain.

TO SERVE:
Spoon pear salad onto plates and top with paprika beef. Serve with French fries on the side. Drizzle with the remaining blue cheese sauce, honey walnuts and parsley.

- 1 sachet of paprika seasoning
- 1 sachet of honey walnuts
- 1 pear
- 1 carrot
