1. TO COOK THE POTATOES:
Place the steamed potatoes into an oven-proof baking dish and spray with oil. Season with salt and place in the oven for 10 mins.
2. TO MAKE THE PARMESAN CRUMBED BAKED FISH:
Remove the tarakihi fillet from its packaging and rinse under cold water. Pat dry with a paper towel. Remove the potatoes from the oven after 10 mins then pour the tomato ragu sauce over the potatoes. Arrange the fish fillet on top of the ragu sauce, sprinkle over the Parmesan crumb and drizzle with olive oil. Place back into the oven and bake for 15 mins.
3. TO MAKE THE SALAD:
Place the rocket into a serving bowl. Thinly slice the roasted capsicum and the radish then add to the bowl. Pour in the balsamic dressing and toss to combine.
TO SERVE:
Arrange the oven baked tarakihi, ragu and potatoes onto a plate and serve the salad on the side.
