Oven baked fish

with tomato ragu and Parmesan crumb

Cooking Instructions:
  • BEFORE COOKING:

    Preheat oven to 200℃ (fan bake).

  • 1. TO COOK THE POTATOES:

    Place the steamed potatoes into an oven proof baking dish and spray with oil. Season with salt and once the oven is up to temperature place in the oven for 10 mins.

  • 2. TO MAKE THE PARMESAN CRUMBED BAKED FISH:

    Remove the tarakihi fillets from their packaging and rinse under cold water. Pat dry with paper towel. After the potatoes have been cooking for 10 mins pour the tomato ragu sauce over the potatoes. Arrange fish fillets on top of the ragu sauce, sprinkle over the Parmesan crumb and drizzle with a little olive oil. Place back into the oven and bake for 15 mins.

  • 3. TO MAKE THE SALAD:

    Place rocket in a bowl. Thinly slice the roasted red capsicum and the radishes and add to the bowl with the rocket. Gently toss with the balsamic dressing to combine.

  • TO SERVE:

    Arrange oven baked tarakihi, ragu and potatoes on plates and serve salad on the side.

  • 1 pack of steamed potatoes
  • 1 pot of tomato ragu sauce
  • 1 sachet of Parmesan crumb
  • 1 pot of balsamic dressing
  • 1 bag of rocket
  • 1 pot of roasted red capsicum
  • 2 radishes
