Before cooking
Preheat oven to 210°C (fan bake) if using for your garlic pita bread.

1. TO COOK THE RICE:
Empty the turmeric rice into a medium sized pot with a tight-fitting lid and add 500 ml of warm water and stir. Place pot on stovetop and bring to the boil over a high heat. Once the rice is boiling place lid on the pot and reduce the heat to low and cook for 12 mins. Turn off the heat and let stand for 4 mins covered. Remove the lid and fluff the rice with a fork.

2. TO PREPARE THE SALAD AND WARM THE PITA:
Cut the cucumber in half and scrape out the seeds with a spoon. Turnover and cut into ½ cm slices on the diagonal. Cut the cherry tomatoes in half. Add the cherry tomatoes and cucumber to a serving bowl along with the baby spinach and a drizzle of olive oil and season with salt and pepper. Place the whole garlic pita in the toaster – if necessary, cut in half and place cut side facing up in the toaster. Cook until golden brown. Remove and cut into half. Alternatively, cook on an oven tray lined with baking paper in the preheated oven for 4-5 mins, turning once during cooking.

3: TO MAKE THE LAMB KOFTA:
Remove the kofta lamb mince from its packaging and place in a bowl and season with salt and pepper and mix well. Dampen your hands and form the mixture into meatballs just smaller than a golf ball then press down to form patties that are 1 cm thick. Heat a large frying pan on a medium-high heat with 1 tbsp of olive oil. Once hot add the koftas and cook for 3-4 mins each side, turning regularly to cook evenly and lightly brown on the outside then remove from the pan.

TO SERVE:
Divide turmeric rice between bowls. Top with some salad and lamb koftas and top with hummus and tzatziki. Serve garlic pita bread on the side.
