Japanese goma dare beef

with steamed rice and sesame greens

RECIPE FACT:
Kikaijima is an island in southern Japan, part of the Amami Islands. Their white sesame is a local variety that accounts for around 70% of Japan's total sesame seed production.

  • 1. TO COOK THE SESAME VEGETABLES:

    Trim the end of the bok choy and discard then slice into 1 cm strips. Cut the broccoli into small bite sized pieces. Heat a drizzle of olive oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the broccoli and cook for 3-4 mins. Add the bok choy and cook for 1-2 mins then add the edamame beans and cook for a further 1-2 mins. Add the sachet of toasted sesame and shallots and mix to combine. Season with salt and pepper then place into a serving dish.

  • 2. TO COOK THE RICE:

    Microwave option (preferred): Open the bag of steamed rice breaking up any clumps by squeezing gently and add to a microwave safe bowl, cover and cook on high (750W) for 2-3 mins. Pan method: Open the bag of steamed rice breaking up any clumps by squeezing gently. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the rice and cook for 2-3 mins until hot.

  • 3. TO COOK THE GOME DARE BEEF:

    Remove the beef sirloin steaks from their packaging and pat dry with a paper towel and season with salt and pepper. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the sirloin steaks and cook for 2-3 mins each side. Remove the steaks from the pan and allow to rest. Reduce the heat to low and pour in the goma dare sauce to warm through. Thinly slice the beef sirloin steaks.

  • TO SERVE:

    Divide the rice between bowls, top with sesame vegetables, sliced beef then spoon over the goma dare sauce.
