Honey soy pork medallions

with sesame stir fry veggies

Cooking Instructions:
  • Before cooking:

    Preheat oven to 210°C fan bake.

  • 1. TO COOK THE KUMARA AND PREPARE THE VEGETABLES:

    Empty the pack of steamed orange and red kumara onto an oven tray lined with baking paper. Drizzle with olive oil and season with salt and pepper. Cook in the preheated oven for 20 mins. Cut the broccoli into very small florets. Trim the end of the bok choy and remove and any damaged outer. Slice into 1 cm slices.

  • 2. TO COOK THE VEGGIES:

    Heat a drizzle of olive in a large non-stick frying pan over a medium-high heat. When the pan is hot, add the broccoli and stir fry for 3 mins. Add the bok choy and ¼ cup of water. Allow vegetables to steam. Take off the heat after a few mins when the water has evaporated. Add veggies to a large serving bowl with the kumara and season with salt and pepper.

  • 3. TO COOK THE PORK:

    Remove the pork medallions form their packaging and pat dry with a paper towel. Heat a drizzle of olive oil in a large non-stick frying pan over a medium-high heat. When the pan is hot cook the pork for 3-4 mins each side and add the honey, soy & sesame sauce and bring up to a simmer for 1-2 mins until thickened.

  • TO SERVE:

    Divide kumara and veggies between bowls. Top with pork and a dollop of sesame mayo then sprinkle over peanut, crispy shallot and sesame.
