Garlic butter beef steak

with roasted vegetables and spiced almonds

RECIPE FACT:
Almonds come from the same family as peaches, cherries and apricots! The nuts are the seed of the fruit. Unlike its fruity cousins, you cannot eat the fleshy part of the almond fruit.

Cooking Instructions:
  • 1. TO COOK THE POTATOES AND CARROT:

    Line an oven tray with baking paper. Place the steamed potatoes onto the tray. Peel the carrot then cut in half lengthways and slice into ½ cm half-moons. Add the carrot to the tray with the potatoes, drizzle with oil and season with salt and pepper. Cook in the oven for 15 mins.

  • 2. TO COOK THE GREEN BEANS:

    Trim both ends off the green beans. Place a non-stick frying pan over a medium-high heat with a drizzle of oil. Once hot, add the green beans, season with salt and pepper and cook for 5-6 mins, stirring occasionally to create a char. Remove from the pan, cover and set aside.

  • 3. TO PREPARE AND COOK THE STEAKS:

    Remove the beef sirloin steaks from their packaging and pat dry with a paper towel. Season with salt and pepper. Wipe out the pan and place back over a medium-high heat with a drizzle of oil. Once hot, add the steaks and cook on each side for 2-3 mins for medium rare - a little longer for well done. Remove from the pan, cover and rest for few mins before slicing.

  • 4. TO PREPARE THE GARLIC BUTTER:

    Place the pan back over a medium heat and add the garlic butter. When the butter starts to bubble, add the spiced almonds, stir and turn off the heat.

  • TO SERVE:

    Divide the potatoes and vegetables between plates. Top with sliced beef then drizzle over garlic butter and spiced almonds. Serve lemon and herb mayo on the side.
