1. TO PREPARE THE VEGETABLES:
Trim both ends off the green beans. Cut the capsicum in half, remove the seeds and cut into ½ cm slices. Finely slice the spring onion on the diagonal.
2. TO COOK THE VEGETABLES:
Line an oven tray with baking paper. Empty the steamed potatoes onto the tray, drizzle with a splash of oil and season with salt and pepper. Bake in the oven for 10-22 mins. Add the green beans and capsicum, season with salt and pepper, and cook for a further 10-12 mins, until golden and crisp around the edges.
3. TO COOK THE CHICKEN:
Place a frying pan over a medium-high heat with a drizzle of oil. Once hot, add the chicken euskadi, season with salt and pepper and cook for 3–4 mins each side, or until cooked through. Pour in the piperrada sauce, spring onion and cook for 1–2 mins, stirring to coat the chicken.
TO SERVE:
Divide the potatoes and vegetables between plates. Top with euskadi chicken in piperrada sauce. Dollop with parsley aioli and finish with the almond sprinkle.
