Char siu chicken

with garlic stir fried greens and roasted peanuts

Cooking Instructions:
  • BEFORE COOKING:

    Preheat the oven to 200⁰c (fan bake).

  • 1. TO PREPARE AND COOK THE CHICKEN:

    Line an oven tray with baking paper. Remove the free-range chicken breasts from their packaging and pat dry with a paper towel. Cut each chicken breast in half horizontally by holding flat on a board and slicing through sideways. Add the chicken onto the tray, pour over the char siu sauce and mix to coat all over. Bake for 5-6 mins. Turn over once and bake for a further 5-6 mins or until the chicken is cooked through.

  • 2. TO PREPARE AND COOK THE STIR FRY GREENS:

    Slice the root end of the bok choy and discard. Slice the stems into ½ cm slices and chop the leaves roughly keeping separated. Finely slice the spring onions on the diagonal. Heat a drizzle of oil in a non-stick frying pan - or a wok if you prefer - over a high heat. Once hot add the carrot noodles and the bok choy stems and cook for 1 min. Add the bok choy leaves, half of the spring onions, the garlic sauce and cook for 1-2 mins. Add the baby spinach and cook for a further 1 min mixing gently.

  • 3. TO COOK THE RICE:

    Microwave option (preferred): Open the bag of sesame rice breaking up any clumps by squeezing the bag gently and add to a microwave safe bowl, cover and cook on high (750W) for 2-3 mins. Pan method: Open the bag of steamed rice breaking up any clumps by squeezing the bag gently. Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. Once hot add the rice and cook for 2-3 mins until hot.

  • TO SERVE:

    Spoon the sesame rice and stir fried greens into bowls drizzling over any remaining sauce. Add the char siu chicken and top with the roasted peanuts and sesame seeds and a sprinkle of the remaining spring onions. If desired finish with a sprinkle of chilli flakes.
