1. TO PREPARE THE VEGETABLES AND CHICKEN:
Trim the woody ends off the broccolini and discard. Slice the cherry tomatoes in half and place into a salad bowl. Place the butter beans into a sieve, rinse under cool running water then drain well. Remove the free-range chicken breasts from their packaging and pat dry with a paper towel. Cut each breast into 3 even pieces and place into a small bowl with the Cajun seasoning. Drizzle with oil, season with salt and pepper then toss to combine.

2. TO COOK THE VEGETABLES:
Spray a non-stick frying pan with oil and place over a medium-high heat. Once hot add the broccolini and cook for 2-3 mins turning occasionally to create a char. Add the butter beans, season with salt and cook for a further 2-3 mins or until starting to char around the edges. Add to the bowl with the tomatoes and allow to cool. Just before serving add the baby cos leaves and half the basil goddess dressing then toss to combine.

3. TO COOK THE CHICKEN:
Respray the pan with oil and place back over a medium-high heat. Once hot, add the chicken pieces and cook for 2-3 mins on each side or until cooked through. BBQ METHOD: Cook the chicken pieces on the grill side of a BBQ for 2-3 mins on each side or until cooked through.

TO SERVE:
Spoon charred broccolini and vegetables onto plates and top with Cajun grilled chicken. Drizzle with the remaining basil goddess dressing and sprinkle over the feta and spiced seeds.
