A SIT DOWN WITH SID SAHRAWAT

We’re excited to partner with New Zealand’s most renowned chefs, Sid Sahrawat, for an exclusive collaboration with Woop!

Over the next four weeks, Sid's specially crafted recipes will be featured on our menu, bringing his dishes inspired by Cassia and The French Café straight to your kitchen.

We sat down with Sid to talk about his passion for cooking, his career highlights, and his new dishes available exclusively at Woop.

Pan-fried Tarakihi with mushroom rice and green chilli cream  

 

My favourite sauce on the Cassia menu is this chilli cream, flavourful rather than hot. The mushroom rice is a nod to an Indian pulao, and I wanted to highlight New Zealand seafood, especially since we live in a country surrounded by water.

Grilled lamb steaks with smashed potatoes and korma sauce 

 

This showcases beautiful New Zealand lamb paired with my love for Indian cuisine. The korma sauce is a favourite at Cassia. It pairs beautifully with crunchy potatoes and it adds warmth, nostalgia, and indulgence to the plate.

Pan-fried chickenbreast with pea ragu and black garlic sauce 

 

I love black garlic for its umami and caramelised depth. Chicken is such a versatile protein and approachable for even novice cooks; the black garlic sauce brings a layer of elegance and richness to the dish. 

 

Delivered on the 15th and 16th March


Thai beef sirloin with red curry sauce and carrot salad 

 

This dish is inspired by my time at Anise Modern Thai in Wellington. We served an incredible Thai beef salad there, and this is my modern take, elevated with a red curry sauce similar to one we use at The French Café.

What are your top 3 career highlights?

  1. Winning Cuisine’s Restaurant of the Year in 2017 for Sidart, with Cassia winning Metro Restaurant of the Year the same year.
  2. Creating menus for Singapore Airlines’ in-flight dining.
  3. Gordon Ramsay dining at Cassia and then posting publicly about it on his socials. 

 

What’s your pet peeve in the kitchen?

Staff slamming fridge doors - it’s loud, distracting, and shows a lack of respect for the equipment. 

 

Why do you think people should try WOOP?

Favourite international cuisine?

Thai. I worked at Anise in Wellington early in my career and fell in love with the vibrant flavours and fresh ingredients.
