How To Properly Roast a Lamb – WOOP

Here at WOOP we're purists at heart. A great cut of lamb on the bone, olive oil, salt and pepper and a hot oven. C'est magnifique!

1Take the lamb out of the fridge 1 hour before cooking. This brings the meat to room temperature to allow even cooking.

2Place the lamb on an oven tray and rub with olive oil, salt and pepper.

3Broil the meat at the top of your oven until browned. Repeat on each side.

4Take the lamb out of the oven and set it to 165 degrees. Mince rosemary and garlic and rub on the top of the leg.

5Cover the lamb loosely with tinfoil and put the lamb back in the middle of the oven for one hour.

6Check the temperature of the lamb. We recommend taking the lamb out at 57 celsius when the lamb is rare as it will continue cooking to medium rare once out of the oven.

7Let the lamb rest for 15 minutes.

8Carve the lamb and serve with mint pesto.


2-3 kg lamb leg, bone in

3 tbsp olive oil

6 cloves garlic

Fresh rosemary

Salt and pepper
