French/Pacific Culture

The word “Caledonian” is used by the French and others who have settled in the islands. The term “Kanak” is used to designate native residents and their culture which developed over a period of three thousand years.

Today, France governs New Caledonia and we can see its influence throughout, from food to fashion.

 

 

Local Food
Being an island in the Pacific, it will come as no surprise that seafood features on many restaurant menus with freshly-caught prawns, lobsters, oysters, marlin, mackerel, crab and mussels.

Local delicacies include Bougna, which is a traditional Melanesian dish combining chicken, lobster or fish with yams, bananas, sweet potatoes and coconut milk wrapped in banana leaves. The food is then steamed in an earth oven heated by hot stones.

 

 

Taste the Influence
There are many aspects of New Caledonian food that are inspired by France, from French restaurants to wine and chocolate boutiques. Even local markets have a French flavour, with many selling buttery croissants and steaming coffees.
