Guest Chef – Josh Emett

We sit down with Josh Emett, New Zealand’s world renowned chef to discuss his background and passion for cooking. Tell us a little bit about yourself?

Born and raised on a dairy farm in Waikato I first got interested in food when working at an old peoples home when I was 15. I studied Practical Cookery & Catering at Waikato Polytechnic and headed off to Auckland soon after and then over to the UK when I was 20. After some tough kitchens I found myself with the notorious Kitchen of  Gordon Ramsay who I stayed working for over 10 years working in London, NY, LA and Melbourne. I am loving being back in NZ and have several restaurants across NZ.

What is the future of cooking?

Local, Sustainable, Minimal Waste. We have to be mindful of the food systems effect on the planet.

Do you have a food philosophy?

Start with great ingredients, focus on flavour and solid technique.

What’s the most important thing about cooking?

Time and Temperature.

What are some of your favourite ingredients to cook with?

I love root vegetables like Jerusalem artichokes, celeriac etc.

Having grown up fishing with my Poppa and Dad I love freshly caught seafood.

Tell us about your WOOP dishes?

All Green Salad with Ginger Garlic Prawns and a Pistachio Wasabi Pea Crumb – This is one of my go-to salads, it is fresh, delicious and with a fantastic dressing.

Herbed Spiced Couscous with Caramelised Onion and Dukkha Crusted Lamb – This is a couscous dish I have made for 10 years, I love the combination of textures, spices & herbs.

Delivered on 1st and 2nd March

Fragrant Thai Lemon Chicken with Steamed Rice –This is a delicious fragrant Thai inspired one pan wonder, quick and always well received.

Delivered on the 8th and 9th March

Sesame Beef kofta in Pita with Seeded Slaw –This was a dish that I used to make for the kids and then we realised we enjoyed eating as much as our boys. I love the pitta pocket packed full of flavour.

What’s going on in your life at the moment – any projects, passions or focuses?

We have huge plans for 2020 and have 2 incredible projects lined up that are still under wraps.. watch this space.

What are your top 3 career highlights?

  • 2 Michelin Stars with Gordon Ramsey while heading up his NY restaurant.
  • Opening Rata Queenstown and seeing its success 8 years on.
  • Cooking for incredible people such as: Mick Jagger, Kings of Leon, LL Cool J, David Beckham.

What’s your pet peeve in the kitchen?

Untidiness.
