  • ½ cup chia seeds
  • 1 cup coconut milk or coconut cream
  • 1 cup lactose free milk
  • ½ cup raspberries (fresh, frozen or canned for the cheapest option)
  • 1 tablespoon of pure raw maple syrup or honey
  • ¾ teaspoon of vanilla essence
  • raw cacao nibs (optional)


Place all ingredients in a bowl, mix well then divide evenly into two mason jars. Cover with a lid or glad wrap and leave in the fridge overnight. To serve, place the cacao nibs and some extra raspberries on top of the pudding to decorate.
