Beef and vegetable satay

with coconut rice, mung beans and roasted peanuts

RECIPE FACT:
Satay is believed to have originated in Java, an island in Indonesia, but has spread to almost anywhere in Indonesia, where it has become a national dish.

Cooking Instructions:
  • 1. TO COOK THE COCONUT RICE:

    Empty the basmati rice into a pot with a tight-fitting lid. Add 500 mls of warm water to the pot. Place pot on the stovetop and bring to the boil over a high heat. Once boiling put the lid on the pot and reduce the heat to low and cook for 12 mins. Remove from the heat and stand with the lid still on for a further 4 mins. Remove the lid and add the coconut cream and fluff the rice with a fork

    • 2. TO PREPARE THE VEGETABLES:

      Roughly chop the coriander leaves and stalk and set aside. Peel the carrot and cut in half lengthways and cut into 1/2 cm half-moons. Trim the end off the bok choy and discard then cut into 1 cm strips. Heat 1 tbsp of oil in a large non-stick frying pan over a medium-high heat. When the pan is hot add the carrot and stir-fry for 3-4 mins. Add the bok choy and cook for a further 1 min then remove from the pan and set aside.

      • 3. TO COOK THE SATAY BEEF:

        Heat 1 tbsp of cooking oil in a large frying pan over a high heat. Remove the beef strips from their packaging and pat dry with a paper towel. Add beef strips to the pan and separate using a wooden spoon. Cook for 30 secs without stirring. Stir and continue cooking for a further 30 secs. Remove from the pan then reduce the heat to medium then add the satay sauce and carrot and bok choy then bring to a simmer. Remove from the heat and stir through the beef strips Season with salt and pepper.

        • To serve:

          Arrange the coconut rice in the centre of each plate. Spoon the beef and vegetable satay onto the rice. Top with chopped roasted peanuts and mung bean sprouts.
