1. TO MAKE THE BABY COS SALAD:
Peel the carrot and make ribbons by pulling a peeler the full length along the carrot, rotating after each peel then place into a salad bowl with the baby cos leaves. Just before serving, add half of the coriander and orange chimichurri, season with salt and toss to combine.
2. TO MAKE THE ANCHO RED BEAN FILLING:
Place the red kidney beans into a sieve, rinse under cool running water and drain well. Open the corn and remove the chilli. Finely slice if using, or discard if not. Place a pot over a medium-high heat with a drizzle of oil. Add the corn and some or all of the chilli (if using) then cook for 1-2 mins, stirring occasionally to create a char. Add the beans, steamed kumara and ancho peanut mole, season with salt and simmer for 1-2 mins. Remove from the heat and lightly mash with a potato masher.
3. TO MAKE THE QUESADILLAS:
Remove the wholemeal tortillas from their packet and lay flat on a clean surface then spread the ancho red bean filling over half of the tortilla. Sprinkle with grated cheese and fold the other half of the tortilla over the filling, pressing gently to create a half-moon shape. Repeat with the other tortillas.
4. TO COOK THE QUESADILLAS:
Wipe out the pan and place back over a medium heat with a drizzle of oil. Carefully place the assembled quesadillas into the pan and cook for 2-3 mins each side, or until golden. You may need to do this in batches, adjusting the heat as necessary.
TO SERVE:
Place the quesadillas onto plates and drizzle with remaining chimichurri. Serve the baby cos salad on the side.
