Alabama fried chicken

with buttered pecan greens and sweet potato

Cooking Instructions:
  • BEFORE COOKING:

    Preheat oven to 210°C fan bake.

  • 1. TO COOK THE SWEET POTATO AND PREPARE THE CHICKEN:

    Place the steamed sweet potato onto an oven tray lined with baking paper. Drizzle with oil and season with salt and pepper. Place into the preheated oven and cook for 20-22 mins. Remove the free-range chicken thighs from their packaging and pat dry with a paper towel. Cut each piece into 3 even pieces and place into a bowl with the smoky seasoning and toss to coat then set aside until needed.

  • 2. TO PREPARE THE VEGETABLES:

    Roughly chop the curly parsley and set aside. Finely chop the silverbeet discarding any coarse stalks. Slice the spring onion on the diagonal.

  • 3. TO COOK THE SILVERBEET:

    Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the corn and cook for 3-4 mins creating a char. Add the silverbeet and spring onion and cook for a further 2-3 mins. Add the pecan butter and cook for 30 secs- 1 min to allow the butter to melt. Remove from the pan and place into a serving dish. Season with salt and pepper.

  • 4. TO COOK THE CHICKEN:

    Heat a drizzle of oil in a non-stick frying pan over a medium-high heat. When the pan is hot add the smoky seasoned chicken and cook for 3-4 mins each side, until cooked through.

  • TO SERVE:

    Divide the sweet potato between plates. Top with silverbeet and pieces of fried chicken. Spoon over a little Alabama BBQ sauce and sprinkle with chopped curly parsley.
